Carrots, Red Sweet Peppers, Kohlrabi, Zucchini
INSTRUCTIONS:
Cut veggies in thin strips.
Nest everything in a lettuce leaf.
Drizzle with sauce.
You can either roll the lettuce as a wrap, or just use the lettuce as an open taco
FOR THE SAUCE: Combine peanut butter, oil, rice wine vinegar, ketchup, sriracha, grated ginger, brown sugar, soy sauce in a bowl. Add vinegar or oil to thin the texture or consistency.
OPTIONS:
You can add grilled chicken breast strips or chicken of the woods mushrooms.
