Beet roots and greens are both edible. Both roots and greens are very low in Saturated Fat and Cholesterol, very good source of Vitamin C, Dietary Fiber, Iron, Folate, Potassium, Manganese and Magnesium. The greens is a good source of Protein, Pantothenic Acid, Phosphorus and Zinc, Vitamin A, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Calcium, and Copper. and Beets are packed with vitamins. Beets have Beta Carotene that fights cancer. It’s a kidney and liver-protective food. An ally to lower blood pressure. It also strengthens your heart and your lungs.
Storage: Cut green tops from the roots, store wrap in a paper towel in a bag inside the refrigerator. Store beet roots dry in a paper bag in the drawer of your refrigerator.
