VEGETABLES USED:

Butternut Squash, Carrots, Garlic, Onion, Tomatoes

INSTRUCTIONS:

Sautee 1 chopped onion, 6 minced garlic cloves, and 1 chopped carrots with oil in a pot. Add 2 tbsp tomato paste. Add 1 quart crushed tomatoes and 1.5 cups beans of choice (black or kidney) and boil. Season with cayenne, chili, paprika, cumin, salt & black pepper. Simmer. Add 2 cups of butternut squash and 1 chopped green pepper. Simmer till squash is cook.
